How it works

Order using the form below. Collection runs continuously at Kalcium on 31 December between 10:00 and 12:00, and clear instructions for finishing the menu at home are included. A standard kitchen with a hob and oven is sufficient. After submitting the form, you receive an automatic receipt; we then reply personally with payment instructions.

Kalcium’s New Year menu — at your table.

  1. Signature struva
    Fresh cheese, aged cheese from Allerum, trout roe & chives.Wine suggestion: Brut Champagne – preferably Blanc de Blancs – with fresh acidity and a fine saline edge.
  2. Sourdough bread & seed crispbreadWhipped butter two ways.
  3. Freshly smoked salmon
    Celeriac, pressed cucumber, soured cream, horseradish, dill & browned butter.Wine suggestion: Fresh, lightly oaked Chardonnay, such as white Burgundy.
  4. Madeira-glazed beef cheek
    Potato terrine, butter-baked Savoy cabbage, mushroom, baked onion & truffle jus.Wine suggestion: Elegant Northern Rhône Syrah with dark fruit, pepper and fresh acidity.
  5. Baked cheesecake
    Sea buckthorn, honey, browned butter & toasted oats.Wine suggestion: Sweet Riesling with bright acidity, preferably Auslese.
  6. Milk chocolate pralineMalt & sea salt.

The automatic receipt does not reserve portions. Your order is confirmed only after payment has been registered and Kalcium has sent a manual confirmation.

Order by 20 December. Collection runs continuously 10.00–12.00 on 31 December.

A total of 120 portions will be made.

If someone else is collecting, provide both their name and phone number.

The menu cannot be adapted. Contact us before ordering if you have questions about its contents.

Collection runs continuously at Byvägen 31 on 31 December, 10:00–12:00; the final collection time is 12:00. No delivery. A standard kitchen with a hob and oven is sufficient. The menu cannot be made vegan, vegetarian, egg-free or milk-protein-free, and individual components cannot be substituted.
