Our wine philosophy

Energy, elegance and a clear sense of character.

The wines are selected to complement the food rather than follow one style or trend. Acidity, maturity, structure and intensity must suit the course beside them. That allows familiar regions and smaller producers to share the same list.

The current list ranges from Champagne, Burgundy, Alsace, the Loire and Rhône to Mosel, Wachau, Piedmont and Tuscany. It includes sparkling, white, red and sweet wines, both for guests choosing one bottle for the meal and those wishing to explore several styles during the evening.

Swedish winegrowing has a clear place on the list, with wines from Kivik, Åhus and Malmö as well as Swedish ice cider. Availability changes as vintages sell out and new bottles arrive; the PDF below is therefore the best snapshot of what is available now.

With the food

Choose a bottle, a pairing or non-alcoholic.

Drinks can be chosen according to how you want the meal to unfold. Current prices are shown on each menu page.

01

Drink pairings

The Dining Room pairing follows the menu through cava, white, red and dessert wine. Chef’s Table begins with Champagne, aquavit and beer for the opening courses, followed by wines chosen for the rest of the menu. Long Lunch includes cava, white and dessert wine.

02

Bottle or glass

The wine list is for guests who prefer to choose for themselves. Ask us for a bottle that can accompany several courses, or for glasses that complement your own selection without becoming a full pairing.

03

Non-alcoholic

The non-alcoholic pairings are built with fruit and berry drinks from local producers. Acidity, sweetness, tannin and texture are matched to the food with the same care used when selecting wine.
